An adventure game is nothing more than a good story set with engaging puzzles that fit seamlessly in with the story and the characters, and looks and sounds beautiful.
A part of Atlantis 2: Beyond Atlantis takes place in Central America.
"Run, you pigeons. It's Robert Frost"
Well you could claim that "Grim Fandango" is influenced by Latin America culture but i imagine you mean a real setting, so i think "Tango: The Adventure Game" maybe fits the bill
There's also Aztec: Curse in the Heart of the City of Gold/aka The Sacret Amulet.
Life: Adventures guaranteed. Instructions not included.
Mexico, 1921: A Deep Slumber
Interesting historical game that takes place after the mexican revolution, in a turbulent period of political instability.
Secret of Easter Island
A very old game, almost prehistoric (published in 1983, on Apple II) where you play an anthropologist who must prevent a devastating volcano eruption.
