So many questions!
Do you replay games? Certain ones specifically, over and over? Or just whatever strikes your fancy when there's nothing new on your menu?
How often do you replay those specific games that you play over and over?
I'll answer in depth later, but I generally wait 2-4 years before replaying a game, unless there's a really good reason...like Fate of Atlantis with the different paths, for example.

I love replaying my favourites, but stuff like GK3 or The Longest Journey don't work super great natively anymore - which has led to not playing them in years.
I'm hoping GOG's preservation program will feature them soon. (Side note: I LOVE GOG's preservation program. Such a neat idea.)
These days I tend to replay narrative games like Life is Strange pretty often. Though I almost never make different choices from my first playthrough.

Not really except in specific cases, mainly:
a) I played said game so far back I forgot and I replayed it without knowing it (like 10 years and more), in this case sometimes I may just replay the whole thing after i realize
b) The game offers not just some different choices, minor paths or endings but different type of gameplay all together if you replay it like quest of Glory , unavowed or the Cave where you assume different characters or roles. In the case of Unavowed and the Cave i replayed them immediately and often do in games like these and then never replay them. But Quest for Glory has a deeper more elaborate gameplay and I usually replay it every couple of years
c) Repetition of the game is a part of the gameplay where you have to complete many cycles to access the true final line like the Nonary games. I may finish it and regrab after a couple of weeks or months (but I may be off-topic here)
d) If I want to replay a game with a friend or a group of friends
e) Game has some "rogue" mechanics and may change significantly every time. In the case of adventures, Hyperdrive Inn comes to mind
f) Maybe i replay a remake - remaster of an old one (my record is leisure Suit Larry, I've played EGA, VGA and reloaded). It's rare though
g) The only exception i can think to all the above is the Japanese adventure Famicom detective 2 The girl in back and specifically the Snes version that I replay every couple of years. I have a weird fascination about that game
Otherwise, I don't really like replaying adventures. In the case of the ones with different endings and choices, I usually try for the optimal ending as I play the first time or try to get a bonus one or an Easter egg or some optional gameplay elements with a recent load (for example In Riddlewood Manor I tried and got all 3 endings and In corpse Party i pressed for the true end). Usually though I will only press on only if the game offers a gameplay challenge of sorts not simple choices, minor puzzle paths or obscure things. My routine after i finish "choices" games is to just look the different dialogues or differentiated endings and staff on the internet and be done with it.

Extremely rarely. I usually only play games once. A game has to be really special for me to replay them, and even then there's probably a lot of years between each playthrough.
Adventure games I have played more than once, and probably will play again in the future: The Longest Journey, Gabriel Knight, The Last Door (S1&2), The Secret of Monkey Island, and Portal.

I replay a lot of the Sierra games, particularly the Quest for Glory and King's Quest games. They're like slipping back into a comfortable world where I can just soak up the atmosphere and enjoy being in a nostalgic bubble for a few hours. Especially QFG 1 & 4, and KQ 2, 3 or 5

I do a Monkey Island marathon on Christmas week every year and play Monkey Island 1, 2, 3, 4, and the five tales from Telltale back-to-back. Much like Estória I tend to fall back in the old classics, it's like putting on your favorite old sweather. I almost never replay modern games, I haven't found one that I wanted to relive yet. I find it especially annoying when the developers put a speed run achievement on Steam for a point and click adventure game, which I see a lot lately. Frankly I would probably replay some games to complete achievements, I'm definitely a completionist, but I know I won't get the speed one ever, so there's no point then. I think I'll replay Foolish Mortals eventually, that one hit the spot.

Yes on the most recent one, Milkmaid of the Milky Way, because it was mostly still unfamiliar. I can’t remember the other time, although I do believe it wasn’t very long ago. Since I retired recently and don’t get paid to think anymore, I pretty much just quit doing it.
